- Chicken broth - 500 milliliters, low sodium
- Canned diced tomatoes - 200 grams
- Cumin - 1 teaspoon
- Chili powder - 1 teaspoon
- Salt - to taste
- Black pepper - to taste

Steps
- Heat the olive oil in a large pot over medium heat. Add the diced onion and garlic, sautéing until translucent, about 3-4 minutes.
- Add the diced bell pepper and carrot to the pot, cooking for an additional 5 minutes until they soften.
- Stir in the chicken breast and cook until lightly browned, about 5-7 minutes.
- Add the canned diced tomatoes, chicken broth, cumin, chili powder, salt, and black pepper. Bring to a boil, then reduce heat and let it simmer for 10 minutes.
- In the last 5 minutes of cooking, add the spiralized zucchini noodles to the pot, stirring gently until they are just tender.
