  • Zucchini - 2 medium, spiralized into noodles

  • Onion - 1 small, diced
  • Bell pepper - 1 small, diced
  • Carrot - 1 medium, diced
  • Chicken broth - 500 milliliters, low sodium
  • Canned diced tomatoes - 200 grams
  • Cumin - 1 teaspoon
  • Chili powder - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Fresh cilantro - for garnish

Steps

  1. Heat the olive oil in a large pot over medium heat. Add the diced onion and garlic, sautéing until translucent, about 3-4 minutes.
  2. Add the diced bell pepper and carrot to the pot, cooking for an additional 5 minutes until they soften.
  3. Stir in the chicken breast and cook until lightly browned, about 5-7 minutes.
  4. Add the canned diced tomatoes, chicken broth, cumin, chili powder, salt, and black pepper. Bring to a boil, then reduce heat and let it simmer for 10 minutes.
  5. In the last 5 minutes of cooking, add the spiralized zucchini noodles to the pot, stirring gently until they are just tender.
  6. Serve hot, garnished with fresh cilantro.
