Ingredients

  • Pork belly - 300 grams

  • Avocado - 1 medium, sliced
  • Corn tortillas - 4 small

Steps

  1. In a pot, cover the pork belly with water and add salt, garlic, and lime juice. Bring to a boil, then reduce heat and simmer for 30 minutes until tender.
  2. Remove the pork belly from the pot and let it cool slightly. Once cool, chop it into small pieces.
  3. In a skillet over medium heat, add the chopped pork and cook until crispy, about 10 minutes, stirring occasionally.
  4. Remove from heat and place the crispy pork on a cutting board. Use a heavy object (like a cast-iron skillet) to press the pork flat and allow it to cool for a few minutes.
  5. Once the pork is pressed and cooled, cut it into squares or strips.
  6. Warm the corn tortillas in a skillet or on a comal until pliable.
  7. Serve the chicharrón prensado with fresh avocado slices, chopped cilantro, and salsa verde on the side.
