- Pork cracklings - 200 grams
- Tomatillos - 250 grams, husked and quartered
- Jalapeño pepper - 1, stem removed and chopped
- Garlic - 2 cloves, minced
- Onion - 1 small, finely chopped
- Cilantro - 2 tablespoons, chopped
- Lime juice - 1 tablespoon
- Olive oil - 1 tablespoon
- Salt - to taste
- Black pepper - to taste
Steps
- In a medium saucepan, heat the olive oil over medium heat. Sauté the chopped onion and minced garlic until translucent, about 3-4 minutes.
- Add the quartered tomatillos and chopped jalapeño to the saucepan. Cook for another 5-7 minutes until the tomatillos are softened.
- Remove the saucepan from heat and let the mixture cool slightly. Then, transfer it to a blender, adding lime juice, cilantro, salt, and black pepper. Blend until smooth.
- Return the blended salsa verde to the saucepan and add the pork cracklings. Stir to combine, allowing the cracklings to absorb some of the sauce flavors. Cook on low heat for 5-10 minutes.
- Serve hot, garnished with additional cilantro if desired.
