Ingredients

  • Shredded cheddar cheese - 100 grams
  • Cream cheese - 50 grams
  • Egg - 1 large
  • Onion - 1 small, finely chopped
  • Garlic - 1 clove, minced
  • Paprika - 1 teaspoon
  • Cumin - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Olive oil - 1 tablespoon
  • Parsley - 1 tablespoon, chopped (for garnish)

Steps

  1. Preheat the oven to 180°C (350°F).
  2. In a skillet, heat olive oil over medium heat and sauté the chopped onion until translucent, about 3-4 minutes.
  3. Add minced garlic, ground beef, paprika, cumin, salt, and black pepper. Cook until the beef is browned and cooked through, about 7-10 minutes. Drain excess fat if necessary.
  4. Stir in the cream cheese until melted and well combined. Remove from heat and let the mixture cool slightly.
  5. In a mixing bowl, combine almond flour, egg, and a pinch of salt. Mix until a dough forms.
  6. Divide the dough into two equal parts and roll each part into a circle about 1/4 inch thick.
  7. Place half of the beef mixture on one side of each dough circle, add shredded cheddar cheese on top, and fold the dough over to create a half-moon shape. Seal the edges by pressing with a fork.
  8. Place the empanadas on a baking sheet lined with parchment paper and bake in the preheated oven for 20-25 minutes or until golden brown.
  9. Remove from the oven, let cool slightly, and garnish with chopped parsley before serving.
