- Cream cheese - 50 grams
- Egg - 1 large
- Onion - 1 small, finely chopped

- Paprika - 1 teaspoon
- Cumin - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Olive oil - 1 tablespoon
- Parsley - 1 tablespoon, chopped (for garnish)
Steps
- Preheat the oven to 180°C (350°F).
- In a skillet, heat olive oil over medium heat and sauté the chopped onion until translucent, about 3-4 minutes.
- Add minced garlic, ground beef, paprika, cumin, salt, and black pepper. Cook until the beef is browned and cooked through, about 7-10 minutes. Drain excess fat if necessary.
- Stir in the cream cheese until melted and well combined. Remove from heat and let the mixture cool slightly.
- In a mixing bowl, combine almond flour, egg, and a pinch of salt. Mix until a dough forms.
- Divide the dough into two equal parts and roll each part into a circle about 1/4 inch thick.
- Place half of the beef mixture on one side of each dough circle, add shredded cheddar cheese on top, and fold the dough over to create a half-moon shape. Seal the edges by pressing with a fork.
- Place the empanadas on a baking sheet lined with parchment paper and bake in the preheated oven for 20-25 minutes or until golden brown.
- Remove from the oven, let cool slightly, and garnish with chopped parsley before serving.
