Ingredients

  • Avocado - 1/2 medium, diced

Steps

  1. In a medium pot, bring water to a boil and add the diced chayote. Cook for 3-4 minutes until tender but still crisp. Drain and let cool.
  2. In a large mixing bowl, combine the cooled chayote, diced tomato, chopped red onion, and cilantro.
  3. In a small bowl, whisk together lime juice, olive oil, salt, and black pepper.
