Ingredients
- Chayote - 2 medium
- Olive oil - 2 tablespoons
- Garlic - 2 cloves, minced
- Cherry tomatoes - 200 grams, halved
- Red onion - 1 small, thinly sliced
- Fresh cilantro - 1/4 cup, chopped
- Lime juice - 2 tablespoons
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Avocado - 1, diced for topping
Steps
- Begin by washing the chayotes thoroughly. Cut them in half lengthwise, remove the seed, and use a spiralizer or a vegetable peeler to create fettuccine-like noodles.
- Heat the olive oil in a large skillet over medium heat. Add the minced garlic and red onion, and sauté for 2-3 minutes until fragrant and translucent.
- Add the cherry tomatoes to the skillet and cook for an additional 5 minutes, stirring occasionally until they are soft.
- Incorporate the chayote fettuccine into the skillet, along with lime juice, salt, and black pepper. Toss everything together and cook for 5-7 minutes until the chayote is tender but still has a slight crunch.
- Remove from heat and stir in the chopped cilantro. Adjust seasoning if needed.
- Serve the chayote fettuccine warm, topped with diced avocado and an extra sprinkle of cilantro for garnish.
