Ingredients

  • Chayote - 2 medium
  • Olive oil - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Cherry tomatoes - 200 grams, halved
  • Red onion - 1 small, thinly sliced
  • Fresh cilantro - 1/4 cup, chopped
  • Lime juice - 2 tablespoons
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Avocado - 1, diced for topping

Steps

  1. Begin by washing the chayotes thoroughly. Cut them in half lengthwise, remove the seed, and use a spiralizer or a vegetable peeler to create fettuccine-like noodles.
  2. Heat the olive oil in a large skillet over medium heat. Add the minced garlic and red onion, and sauté for 2-3 minutes until fragrant and translucent.
  3. Add the cherry tomatoes to the skillet and cook for an additional 5 minutes, stirring occasionally until they are soft.
  4. Incorporate the chayote fettuccine into the skillet, along with lime juice, salt, and black pepper. Toss everything together and cook for 5-7 minutes until the chayote is tender but still has a slight crunch.
  5. Remove from heat and stir in the chopped cilantro. Adjust seasoning if needed.
  6. Serve the chayote fettuccine warm, topped with diced avocado and an extra sprinkle of cilantro for garnish.
