Ingredients

  • Chayote - 2 medium
  • Cotija cheese - 100 grams, crumbled
  • Sour cream - 50 grams
  • Garlic - 1 clove, minced
  • Olive oil - 1 tablespoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Fresh cilantro - 2 tablespoons, chopped
  • Lime - 1, juiced

Steps

  1. Preheat the oven to 190°C (375°F).
  2. Slice the chayotes in half lengthwise and remove the pit.
  3. In a pot of boiling water, blanch the chayote halves for about 5 minutes until slightly tender. Drain and let them cool.
  4. In a mixing bowl, combine the crumbled Cotija cheese, sour cream, minced garlic, olive oil, salt, black pepper, chopped cilantro, and lime juice. Mix well to create a filling.
  5. Place the chayote halves cut-side up on a baking dish and fill each half with the cheese mixture.
  6. Bake in the preheated oven for about 15-20 minutes, or until the cheese is bubbly and golden.
  7. Remove from the oven and let cool slightly before serving.
