- Chayote - 2 medium
- Cotija cheese - 100 grams, crumbled
- Sour cream - 50 grams
- Garlic - 1 clove, minced
- Olive oil - 1 tablespoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Fresh cilantro - 2 tablespoons, chopped
- Lime - 1, juiced
Steps
- Preheat the oven to 190°C (375°F).
- Slice the chayotes in half lengthwise and remove the pit.
- In a pot of boiling water, blanch the chayote halves for about 5 minutes until slightly tender. Drain and let them cool.
- In a mixing bowl, combine the crumbled Cotija cheese, sour cream, minced garlic, olive oil, salt, black pepper, chopped cilantro, and lime juice. Mix well to create a filling.
- Place the chayote halves cut-side up on a baking dish and fill each half with the cheese mixture.
- Bake in the preheated oven for about 15-20 minutes, or until the cheese is bubbly and golden.
- Remove from the oven and let cool slightly before serving.
