Ingredients
- Chayote - 2 medium-sized
- Fresh lime juice - 2 tablespoons
- Olive oil - 1 tablespoon
- Garlic - 1 clove, minced
- Fresh cilantro - 2 tablespoons, chopped
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Red pepper flakes - 1/4 teaspoon (optional)
Steps
- Wash the chayotes thoroughly and cut each one in half lengthwise. Remove the seed from the center and scoop out a small portion of the flesh to create a small cavity.
- Bring a pot of salted water to a boil and add the chayote halves. Boil for about 10 minutes, or until just tender.
- Drain the chayote and let it cool slightly before handling. Once cool, chop the chayote into bite-sized pieces.
- In a mixing bowl, combine the chopped chayote, lime juice, olive oil, minced garlic, chopped cilantro, salt, black pepper, and red pepper flakes (if using). Toss everything together until well coated.
- Let the mixture sit for about 5 minutes to allow the flavors to meld before serving.
