Steps

  1. Wash the chayotes thoroughly and cut each one in half lengthwise. Remove the seed from the center and scoop out a small portion of the flesh to create a small cavity.
  2. Bring a pot of salted water to a boil and add the chayote halves. Boil for about 10 minutes, or until just tender.
  3. Drain the chayote and let it cool slightly before handling. Once cool, chop the chayote into bite-sized pieces.
  4. In a mixing bowl, combine the chopped chayote, lime juice, olive oil, minced garlic, chopped cilantro, salt, black pepper, and red pepper flakes (if using). Toss everything together until well coated.
