  • Corn tortillas - 4
  • Zucchini - 150 grams, diced
  • Red bell pepper - 100 grams, diced
  • Yellow onion - 50 grams, chopped
  • Mushrooms - 100 grams, sliced
  • Garlic - 2 cloves, minced
  • Olive oil - 2 tablespoons
  • Cumin - 1 teaspoon
  • Smoked paprika - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Fresh cilantro - 2 tablespoons, chopped
  • Avocado - 1, sliced
  • Lime - 1, cut into wedges

Steps

  1. In a skillet, heat olive oil over medium heat. Add the chopped onion and sauté for 3-4 minutes until translucent.
  2. Add the minced garlic, diced zucchini, diced red bell pepper, and sliced mushrooms to the skillet. Sauté for another 5-7 minutes until the vegetables are tender.
  3. Stir in cumin, smoked paprika, salt, and black pepper. Cook for an additional 2 minutes to combine the spices with the vegetables.
  4. While the vegetable mixture is cooking, warm the corn tortillas in a separate pan for about 1 minute on each side until they are soft and pliable.
  5. To assemble, place a generous scoop of the sautéed vegetable mixture on each tortilla.
  6. Top with fresh cilantro and avocado slices. Serve with lime wedges on the side.
