- Yellow onion - 50 grams, chopped
- Mushrooms - 100 grams, sliced
- Garlic - 2 cloves, minced
- Olive oil - 2 tablespoons
- Cumin - 1 teaspoon
- Smoked paprika - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Fresh cilantro - 2 tablespoons, chopped
- Avocado - 1, sliced
- Lime - 1, cut into wedges
Steps
- In a skillet, heat olive oil over medium heat. Add the chopped onion and sauté for 3-4 minutes until translucent.
- Add the minced garlic, diced zucchini, diced red bell pepper, and sliced mushrooms to the skillet. Sauté for another 5-7 minutes until the vegetables are tender.
- Stir in cumin, smoked paprika, salt, and black pepper. Cook for an additional 2 minutes to combine the spices with the vegetables.
- While the vegetable mixture is cooking, warm the corn tortillas in a separate pan for about 1 minute on each side until they are soft and pliable.
- To assemble, place a generous scoop of the sautéed vegetable mixture on each tortilla.
- Top with fresh cilantro and avocado slices. Serve with lime wedges on the side.
