- Pork shoulder (kosher) - 300 grams
- Onion - 1 medium, diced
- Garlic - 2 cloves, minced
- Tomato - 1 medium, diced
- Chipotle pepper in adobo sauce - 1, minced
- Cumin - 1 teaspoon
- Oregano - 1 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Olive oil - 1 tablespoon
- Cilantro - 2 tablespoons, chopped
- Lime - 1, cut into wedges
Steps
- In a pot, heat olive oil over medium heat and sauté the diced onion and minced garlic until translucent.
- Add the pork shoulder to the pot and brown on all sides.
- Stir in the diced tomato, chipotle pepper, cumin, oregano, salt, and black pepper.
- Cover the pork with enough water to submerge it and bring to a boil.
- Reduce heat to low and simmer for about 1.5 hours or until the pork is tender and easily shredded.
- Once cooked, remove the pork from the pot, shred it with two forks, and return it to the pot to absorb the flavors.
- While the pork cooks, heat a dry skillet over medium-high heat and lightly toast the corn tortillas until they are crispy.
- To serve, place the crispy tortillas on plates, top with the pulled pork mixture, and garnish with chopped cilantro.
- Serve with lime wedges on the side.
