Ingredients

  • Corn tortillas - 4 pieces
  • Pork shoulder (kosher) - 300 grams
  • Onion - 1 medium, diced
  • Garlic - 2 cloves, minced
  • Tomato - 1 medium, diced
  • Chipotle pepper in adobo sauce - 1, minced
  • Cumin - 1 teaspoon
  • Oregano - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Olive oil - 1 tablespoon
  • Cilantro - 2 tablespoons, chopped
  • Lime - 1, cut into wedges

Steps

  1. In a pot, heat olive oil over medium heat and sauté the diced onion and minced garlic until translucent.
  2. Add the pork shoulder to the pot and brown on all sides.
  3. Stir in the diced tomato, chipotle pepper, cumin, oregano, salt, and black pepper.
  4. Cover the pork with enough water to submerge it and bring to a boil.
  5. Reduce heat to low and simmer for about 1.5 hours or until the pork is tender and easily shredded.
  6. Once cooked, remove the pork from the pot, shred it with two forks, and return it to the pot to absorb the flavors.
  7. While the pork cooks, heat a dry skillet over medium-high heat and lightly toast the corn tortillas until they are crispy.
  8. To serve, place the crispy tortillas on plates, top with the pulled pork mixture, and garnish with chopped cilantro.
  9. Serve with lime wedges on the side.
