Ingredients

  • Corn tortillas - 4
  • Cooked chicken breast, shredded - 200 grams
  • Black beans, canned - 1/2 cup (120 grams), rinsed and drained
  • Avocado, diced - 1 medium
  • Tomato, diced - 1 medium
  • Red onion, finely chopped - 1/4 medium
  • Cilantro, chopped - 2 tablespoons
  • Lime juice - 2 tablespoons
  • Olive oil - 1 tablespoon
  • Salt - to taste
  • Pepper - to taste
  • Feta cheese, crumbled - 30 grams

Steps

  1. In a mixing bowl, combine the shredded chicken with lime juice, olive oil, salt, and pepper. Set aside to marinate for about 10 minutes.
  2. While the chicken is marinating, prepare the toppings: dice the avocado, tomato, and finely chop the red onion and cilantro.
  3. Heat a non-stick skillet over medium heat. Lightly toast the corn tortillas on both sides for about 1-2 minutes until they are crispy.
  4. Once the tortillas are ready, place them on a serving plate. Top each tortilla with a generous portion of the marinated chicken, followed by black beans, diced avocado, tomato, red onion, and cilantro.
