- Black beans, canned - 1/2 cup (120 grams), rinsed and drained
- Avocado, diced - 1 medium
- Tomato, diced - 1 medium
- Red onion, finely chopped - 1/4 medium
- Cilantro, chopped - 2 tablespoons
- Lime juice - 2 tablespoons
- Olive oil - 1 tablespoon
- Salt - to taste
- Pepper - to taste
- Feta cheese, crumbled - 30 grams
Steps
- In a mixing bowl, combine the shredded chicken with lime juice, olive oil, salt, and pepper. Set aside to marinate for about 10 minutes.
- While the chicken is marinating, prepare the toppings: dice the avocado, tomato, and finely chop the red onion and cilantro.
- Heat a non-stick skillet over medium heat. Lightly toast the corn tortillas on both sides for about 1-2 minutes until they are crispy.
- Once the tortillas are ready, place them on a serving plate. Top each tortilla with a generous portion of the marinated chicken, followed by black beans, diced avocado, tomato, red onion, and cilantro.
