  • Tomato (diced) - 1 medium

  • Lime (juiced) - 1 tablespoon
  • Salsa (optional) - to taste

Steps

  1. In a skillet, heat 1 tablespoon of olive oil over medium heat. Add the chopped onion and minced garlic, sautéing until translucent, about 3-4 minutes.
  2. Stir in the mashed black beans, cumin, salt, and pepper. Cook for another 5-7 minutes, allowing the flavors to meld together.
  3. In a separate pan, heat the remaining tablespoon of olive oil over medium-high heat. Fry each corn tortilla for about 30 seconds on each side until they are crispy. Drain on paper towels.
  4. Top each crispy tortilla with the black bean mixture, followed by diced tomatoes, sliced avocado, and chopped cilantro.
