Ingredients

  • Corn tortillas - 4
  • Ground halal beef - 250 grams
  • Black beans - 100 grams, cooked
  • Onion - 1 small, finely chopped
  • Garlic - 2 cloves, minced
  • Cumin - 1 teaspoon
  • Chili powder - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Cheddar cheese - 100 grams, shredded
  • Sour cream - 50 grams
  • Lettuce - 50 grams, shredded
  • Tomato - 1 medium, diced
  • Cilantro - 2 tablespoons, chopped
  • Olive oil - 1 tablespoon

Steps

  1. Preheat the oven to 200°C (400°F).
  2. In a skillet, heat the olive oil over medium heat. Add the chopped onion and minced garlic, sautéing until translucent.
  3. Add the ground halal beef to the skillet, cooking until browned. Stir in the cumin, chili powder, salt, and black pepper.
  4. Once the meat is cooked, mix in the black beans and heat through for about 2 minutes.
  5. On a baking sheet, arrange the corn tortillas. Spoon the meat and bean mixture evenly onto each tortilla.
  6. Sprinkle the shredded cheddar cheese on top of the meat mixture.
  7. Bake in the preheated oven for about 10-12 minutes or until the cheese is melted and the edges of the tortillas are crispy.
  8. Remove from the oven and top with shredded lettuce, diced tomato, sour cream, and chopped cilantro before serving.
