- Corn tortillas - 4
- Ground halal beef - 250 grams
- Black beans - 100 grams, cooked
- Onion - 1 small, finely chopped
- Garlic - 2 cloves, minced
- Cumin - 1 teaspoon
- Chili powder - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Cheddar cheese - 100 grams, shredded
- Sour cream - 50 grams
- Lettuce - 50 grams, shredded
- Tomato - 1 medium, diced
- Cilantro - 2 tablespoons, chopped
- Olive oil - 1 tablespoon
Steps
- Preheat the oven to 200°C (400°F).
- In a skillet, heat the olive oil over medium heat. Add the chopped onion and minced garlic, sautéing until translucent.
- Add the ground halal beef to the skillet, cooking until browned. Stir in the cumin, chili powder, salt, and black pepper.
- Once the meat is cooked, mix in the black beans and heat through for about 2 minutes.
- On a baking sheet, arrange the corn tortillas. Spoon the meat and bean mixture evenly onto each tortilla.
- Sprinkle the shredded cheddar cheese on top of the meat mixture.
- Bake in the preheated oven for about 10-12 minutes or until the cheese is melted and the edges of the tortillas are crispy.
- Remove from the oven and top with shredded lettuce, diced tomato, sour cream, and chopped cilantro before serving.
