  • Corn tortillas - 4
  • Black beans - 200 grams, cooked
  • Olive oil - 2 tablespoons
  • Red onion - 50 grams, diced
  • Garlic - 2 cloves, minced
  • Bell pepper - 100 grams, diced
  • Corn kernels - 100 grams, fresh or frozen
  • Cumin - 1 teaspoon
  • Paprika - 1 teaspoon
  • Lime juice - 1 tablespoon
  • Salt - to taste
  • Avocado - 1, sliced
  • Fresh cilantro - a handful, chopped
  • Tomato - 1 medium, diced

Steps

  1. In a skillet, heat 1 tablespoon of olive oil over medium heat and sauté the diced red onion and minced garlic until translucent, about 3-4 minutes.
  2. Add the diced bell pepper and corn kernels to the skillet, cooking for an additional 5 minutes until softened.
  3. Stir in the cooked black beans, cumin, paprika, lime juice, and salt to taste. Cook for 3-4 more minutes, allowing the flavors to meld. Remove from heat.
  4. In a separate skillet, heat the remaining 1 tablespoon of olive oil over medium-high heat. Fry the corn tortillas one at a time until crispy, about 2 minutes per side. Drain on paper towels.
  5. Once the tortillas are crispy, top each with the black bean mixture, sliced avocado, diced tomato, and chopped cilantro.
