- Corn tortillas - 4
- Black beans - 200 grams, cooked
- Olive oil - 2 tablespoons
- Red onion - 50 grams, diced
- Garlic - 2 cloves, minced
- Bell pepper - 100 grams, diced
- Corn kernels - 100 grams, fresh or frozen
- Cumin - 1 teaspoon
- Paprika - 1 teaspoon
- Lime juice - 1 tablespoon
- Salt - to taste
- Avocado - 1, sliced
- Fresh cilantro - a handful, chopped
- Tomato - 1 medium, diced
Steps
- In a skillet, heat 1 tablespoon of olive oil over medium heat and sauté the diced red onion and minced garlic until translucent, about 3-4 minutes.
- Add the diced bell pepper and corn kernels to the skillet, cooking for an additional 5 minutes until softened.
- Stir in the cooked black beans, cumin, paprika, lime juice, and salt to taste. Cook for 3-4 more minutes, allowing the flavors to meld. Remove from heat.
- In a separate skillet, heat the remaining 1 tablespoon of olive oil over medium-high heat. Fry the corn tortillas one at a time until crispy, about 2 minutes per side. Drain on paper towels.
- Once the tortillas are crispy, top each with the black bean mixture, sliced avocado, diced tomato, and chopped cilantro.
