Ingredients

  • Pizza dough - 200 grams
  • Cherry tomatoes - 100 grams, halved
  • Cucumber - 50 grams, diced
  • Red onion - 30 grams, finely chopped
  • Avocado - 1 medium, sliced
  • Fresh cilantro - 10 grams, chopped
  • Lime juice - 2 tablespoons
  • Olive oil - 1 tablespoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Jalapeño - 1 small, finely chopped (optional)
  • Corn kernels - 50 grams (cooked or canned)
  • Radishes - 30 grams, thinly sliced

Steps

  1. Preheat your oven to 220°C (428°F).
  2. Roll out the pizza dough on a floured surface to your desired thickness, then transfer it to a baking sheet.
  3. Bake the pizza dough in the preheated oven for about 10-12 minutes, or until golden brown.
  4. While the dough is baking, prepare the ceviche topping by combining the cherry tomatoes, cucumber, red onion, cilantro, lime juice, olive oil, salt, black pepper, and jalapeño in a mixing bowl. Stir well to combine and let it marinate for about 10 minutes.
  5. Once the pizza crust is done, remove it from the oven and let it cool slightly.
  6. Spread the ceviche mixture evenly over the baked pizza crust.
  7. Top with sliced avocado, corn kernels, and radishes.
  8. Slice the pizza and serve immediately, garnished with extra cilantro if desired.
