  • Zucchini - 2 medium, spiralized
  • Raw shrimp - 200 grams, peeled and deveined
  • Lime juice - 60 ml (about 4 limes)
  • Red onion - 1/4 medium, finely chopped
  • Tomato - 1 medium, diced
  • Cilantro - 2 tablespoons, chopped
  • Jalapeño - 1 small, finely chopped (optional)
  • Avocado - 1 medium, diced
  • Olive oil - 1 tablespoon
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. In a bowl, combine the raw shrimp with lime juice, salt, and pepper. Let it marinate for 10 minutes until the shrimp turns opaque.
  2. Meanwhile, prepare the zucchini noodles using a spiralizer and set aside.
  3. In a large mixing bowl, combine the marinated shrimp (including the lime juice), red onion, diced tomato, cilantro, and jalapeño (if using). Mix well.
  4. In a separate bowl, toss the zucchini noodles with olive oil, salt, and pepper to taste.
  5. To serve, place the zucchini noodles on a plate, top with the ceviche mixture, and finish with diced avocado.
