  • Cucumber - 1/2 medium, diced
  • Fresh cilantro - 2 tablespoons, chopped
  • Jalapeño pepper - 1 teaspoon, finely chopped
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Avocado - 1/2, diced (for garnish)

Steps

  1. Cut the sole fish fillets into small, bite-sized pieces and place them in a glass or ceramic bowl.
  2. Pour the fresh lime juice over the fish, ensuring it's fully submerged. Cover the bowl and refrigerate for 20 minutes, allowing the fish to 'cook' in the citrus juice.
  3. While the fish marinates, prepare the vegetables: finely chop the red onion, dice the tomato and cucumber, and chop the cilantro and jalapeño pepper.

  5. Gently mix all ingredients until combined, then taste and adjust seasoning if necessary.
