- Fresh conchas (scallops) - 200 grams
- Lime juice - 60 ml
- Red onion - 1 small, finely chopped
- Tomato - 1 medium, diced
- Cucumber - 1 small, diced
- Cilantro - 2 tablespoons, chopped
- Jalapeño - 1 small, finely chopped
- Sea salt - to taste
- Black pepper - to taste
- Avocado - 1 small, diced (for garnish)
Steps
- Rinse the conchas thoroughly under cold water and pat them dry with a paper towel.
- In a glass bowl, combine the fresh conchas with lime juice, ensuring they are completely submerged. Let them marinate in the refrigerator for about 15-20 minutes until they are opaque.
- While the conchas are marinating, prepare the vegetables: finely chop the red onion, dice the tomato and cucumber, chop the cilantro, and finely chop the jalapeño.
- Once the conchas are ready, drain some of the lime juice, leaving a little to keep the ceviche moist.
- Add the chopped vegetables to the bowl with the marinated conchas and gently mix everything together.
- Season the ceviche with sea salt and black pepper to taste.
- Serve the ceviche chilled in bowls, garnished with diced avocado on top.
