Ingredients

  • Fresh conchas (scallops) - 200 grams
  • Lime juice - 60 ml
  • Red onion - 1 small, finely chopped
  • Tomato - 1 medium, diced
  • Cucumber - 1 small, diced
  • Cilantro - 2 tablespoons, chopped
  • Jalapeño - 1 small, finely chopped
  • Sea salt - to taste
  • Black pepper - to taste
  • Avocado - 1 small, diced (for garnish)

Steps

  1. Rinse the conchas thoroughly under cold water and pat them dry with a paper towel.
  2. In a glass bowl, combine the fresh conchas with lime juice, ensuring they are completely submerged. Let them marinate in the refrigerator for about 15-20 minutes until they are opaque.
  3. While the conchas are marinating, prepare the vegetables: finely chop the red onion, dice the tomato and cucumber, chop the cilantro, and finely chop the jalapeño.
  4. Once the conchas are ready, drain some of the lime juice, leaving a little to keep the ceviche moist.
  5. Add the chopped vegetables to the bowl with the marinated conchas and gently mix everything together.
  6. Season the ceviche with sea salt and black pepper to taste.
  7. Serve the ceviche chilled in bowls, garnished with diced avocado on top.
