- Sesame-seed bolillo rolls - 2
- Grilled chicken breast - 200 grams
- Avocado - 1 medium, sliced
- Quesillo (Oaxacan cheese) - 100 grams, shredded
- Chipotle sauce - 2 tablespoons
- Pico de gallo - 1/2 cup
- Fresh cilantro - 2 tablespoons, chopped
- Lettuce - 1 cup, shredded
- Olive oil - 1 tablespoon
- Salt - to taste
- Pepper - to taste
Steps
- Preheat a grill or skillet over medium heat.
- Season the grilled chicken breast with salt, pepper, and olive oil.
- Cook the chicken on the grill or skillet for about 6-7 minutes on each side, or until fully cooked.
- While the chicken is cooking, prepare the chipotle sauce by mixing it with a little bit of water to thin it out, if desired.
- Slice the bolillo rolls in half and lightly toast them on the grill or in a toaster.
- Once the chicken is cooked, slice it into strips.
- Assemble the cemitas by spreading chipotle sauce on the bottom half of each bolillo roll.
- Layer with shredded lettuce, grilled chicken, sliced avocado, pico de gallo, and quesillo.
- Top with fresh cilantro and the other half of the bolillo roll.
