Ingredients

  • Sesame-seed bolillo rolls - 2
  • Grilled chicken breast - 200 grams
  • Avocado - 1 medium, sliced
  • Quesillo (Oaxacan cheese) - 100 grams, shredded
  • Chipotle sauce - 2 tablespoons
  • Pico de gallo - 1/2 cup
  • Fresh cilantro - 2 tablespoons, chopped
  • Lettuce - 1 cup, shredded
  • Olive oil - 1 tablespoon
  • Salt - to taste
  • Pepper - to taste

Steps

  1. Preheat a grill or skillet over medium heat.
  2. Season the grilled chicken breast with salt, pepper, and olive oil.
  3. Cook the chicken on the grill or skillet for about 6-7 minutes on each side, or until fully cooked.
  4. While the chicken is cooking, prepare the chipotle sauce by mixing it with a little bit of water to thin it out, if desired.
  5. Slice the bolillo rolls in half and lightly toast them on the grill or in a toaster.
  6. Once the chicken is cooked, slice it into strips.
  7. Assemble the cemitas by spreading chipotle sauce on the bottom half of each bolillo roll.
  8. Layer with shredded lettuce, grilled chicken, sliced avocado, pico de gallo, and quesillo.
  9. Top with fresh cilantro and the other half of the bolillo roll.
