Ingredients
- Pork loin - 300 grams
- Sea salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Cumin powder - 1/2 teaspoon
- Oregano - 1/2 teaspoon
- Garlic powder - 1 teaspoon
- Paprika - 1 teaspoon
- Orange juice - 60 ml
- Lime juice - 30 ml
- Olive oil - 1 tablespoon
Steps
- Slice the pork loin into thin, even pieces, about 1/2 cm thick.
- In a bowl, mix sea salt, black pepper, cumin, oregano, garlic powder, and paprika.
- Rub the spice mixture thoroughly over the pork slices on both sides.
- In a separate bowl, combine orange juice, lime juice, and olive oil. Mix well.
- Place the seasoned pork into a ziplock bag and pour the marinade over it. Seal the bag and refrigerate for at least 2 hours, preferably overnight.
- After marinating, remove the pork from the bag and pat it dry with paper towels.
- Arrange the pork slices on a clean surface or a rack and leave them to air dry for about 1 hour in a warm, dry place, or sun-dry if possible.
- Preheat your grill or BBQ to medium-high heat.
- Grill the pork slices for about 4-5 minutes on each side, or until they are cooked through and have nice grill marks.
- Serve the cecina hot with fresh lime wedges and your choice of salsas.
