Ingredients

  • Pork loin - 300 grams
  • Sea salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Cumin powder - 1/2 teaspoon
  • Oregano - 1/2 teaspoon
  • Garlic powder - 1 teaspoon
  • Paprika - 1 teaspoon
  • Orange juice - 60 ml
  • Lime juice - 30 ml
  • Olive oil - 1 tablespoon

Steps

  1. Slice the pork loin into thin, even pieces, about 1/2 cm thick.
  2. In a bowl, mix sea salt, black pepper, cumin, oregano, garlic powder, and paprika.
  3. Rub the spice mixture thoroughly over the pork slices on both sides.
  4. In a separate bowl, combine orange juice, lime juice, and olive oil. Mix well.
  5. Place the seasoned pork into a ziplock bag and pour the marinade over it. Seal the bag and refrigerate for at least 2 hours, preferably overnight.
  6. After marinating, remove the pork from the bag and pat it dry with paper towels.
  7. Arrange the pork slices on a clean surface or a rack and leave them to air dry for about 1 hour in a warm, dry place, or sun-dry if possible.
  8. Preheat your grill or BBQ to medium-high heat.
  9. Grill the pork slices for about 4-5 minutes on each side, or until they are cooked through and have nice grill marks.
  10. Serve the cecina hot with fresh lime wedges and your choice of salsas.
