  • Cherry tomatoes - 150 grams, halved
  • Corn kernels - 100 grams (fresh or frozen)
  • Black beans - 200 grams, drained and rinsed
  • Garlic - 2 cloves, minced
  • Olive oil - 2 tablespoons
  • Cumin - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Fresh cilantro - for garnish
  • Avocado - 1 small, sliced (optional)

Steps

  1. Preheat your oven to 200°C (400°F).
  2. In a large mixing bowl, combine the diced zucchini, red bell pepper, yellow bell pepper, red onion, cherry tomatoes, corn, and black beans.
