  • Garlic - 2 cloves, minced
  • Red bell pepper - 1 medium, diced
  • Zucchini - 1 medium, diced
  • Tomato - 2 medium, diced
  • Carrot - 1 medium, diced
  • Chicken broth - 250 ml, low sodium
  • Mexican oregano - 1 teaspoon
  • Cumin - 1/2 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Fresh cilantro - 2 tablespoons, chopped (for garnish)

Steps

  1. Heat olive oil in a large skillet over medium heat.
  2. Add chopped onion and minced garlic, sauté until the onion is translucent, about 3-4 minutes.
  3. Add the chicken thighs to the skillet, cooking until browned on all sides, about 5-7 minutes.
  4. Stir in the diced red bell pepper, zucchini, tomato, and carrot, cooking for another 5 minutes until the vegetables start to soften.
  5. Pour in the chicken broth and add the oregano, cumin, salt, and black pepper.
  6. Bring the mixture to a simmer, cover, and let it cook for 15-20 minutes, or until the chicken is cooked through and tender.
  7. Remove the skillet from heat, shred the chicken into bite-sized pieces, and stir to combine.
