- Red bell pepper - 1 medium, diced
- Zucchini - 1 medium, diced
- Tomato - 2 medium, diced
- Carrot - 1 medium, diced
- Chicken broth - 250 ml, low sodium
- Mexican oregano - 1 teaspoon
- Cumin - 1/2 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Fresh cilantro - 2 tablespoons, chopped (for garnish)
Steps
- Heat olive oil in a large skillet over medium heat.
- Add chopped onion and minced garlic, sauté until the onion is translucent, about 3-4 minutes.
- Add the chicken thighs to the skillet, cooking until browned on all sides, about 5-7 minutes.
- Stir in the diced red bell pepper, zucchini, tomato, and carrot, cooking for another 5 minutes until the vegetables start to soften.
- Pour in the chicken broth and add the oregano, cumin, salt, and black pepper.
- Bring the mixture to a simmer, cover, and let it cook for 15-20 minutes, or until the chicken is cooked through and tender.
- Remove the skillet from heat, shred the chicken into bite-sized pieces, and stir to combine.
