- Tomatoes - 200 grams, chopped
- Green bell pepper - 100 grams, diced
- Red onion - 50 grams, diced
- Garlic - 2 cloves, minced
- Olive oil - 1 tablespoon
- Cilantro - 15 grams, chopped
- Feta cheese - 50 grams, crumbled
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Chili powder - 1/2 teaspoon
- Avocado - 1 medium, sliced (for serving)
Steps
- Preheat the oven to 180°C (350°F).
- In a medium skillet, heat the olive oil over medium heat and sauté the diced red onion and minced garlic until translucent, about 3-4 minutes.
- Add the chopped tomatoes and diced green bell pepper to the skillet, and season with salt, black pepper, and chili powder. Cook for another 5-7 minutes until the vegetables are soft.
- Transfer the vegetable mixture to a small baking dish, spreading it evenly.
- Make four small wells in the vegetable mixture and crack one egg into each well.
- Sprinkle the crumbled feta cheese and chopped cilantro over the top.
- Bake in the preheated oven for 15-20 minutes, or until the eggs are set to your liking.
- Serve hot with sliced avocado on the side.
