Ingredients

  • Eggs - 4 large
  • Tomatoes - 200 grams, chopped
  • Green bell pepper - 100 grams, diced
  • Red onion - 50 grams, diced
  • Garlic - 2 cloves, minced
  • Olive oil - 1 tablespoon
  • Cilantro - 15 grams, chopped
  • Feta cheese - 50 grams, crumbled
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Chili powder - 1/2 teaspoon
  • Avocado - 1 medium, sliced (for serving)

Steps

  1. Preheat the oven to 180°C (350°F).
  2. In a medium skillet, heat the olive oil over medium heat and sauté the diced red onion and minced garlic until translucent, about 3-4 minutes.
  3. Add the chopped tomatoes and diced green bell pepper to the skillet, and season with salt, black pepper, and chili powder. Cook for another 5-7 minutes until the vegetables are soft.
  4. Transfer the vegetable mixture to a small baking dish, spreading it evenly.
  5. Make four small wells in the vegetable mixture and crack one egg into each well.
  6. Sprinkle the crumbled feta cheese and chopped cilantro over the top.
  7. Bake in the preheated oven for 15-20 minutes, or until the eggs are set to your liking.
  8. Serve hot with sliced avocado on the side.
