Ingredients
- Chorizo - 200 grams
- Eggs - 4 large
- Red bell pepper - 1 medium, diced
- Green bell pepper - 1 medium, diced
- Onion - 1 small, diced
- Garlic - 2 cloves, minced
- Olive oil - 1 tablespoon
- Cilantro - 2 tablespoons, chopped
- Salt - to taste
- Black pepper - to taste
- Cheddar cheese - 50 grams, shredded
Steps
- Preheat your oven to 180°C (350°F).
- In a skillet over medium heat, add the olive oil and sauté the diced onion and garlic until translucent, about 3-4 minutes.
- Add the diced red and green bell peppers to the skillet and cook for another 5 minutes until softened.
- Add the chorizo to the skillet, breaking it apart with a spatula and cooking until browned, about 5-7 minutes.
- Season the mixture with salt and black pepper to taste.
- In a bowl, beat the eggs and pour them over the chorizo and vegetable mixture in the skillet, stirring gently to combine.
- Sprinkle the shredded cheddar cheese on top and transfer the skillet to the preheated oven.
- Bake for 10-15 minutes, or until the eggs are set and the cheese is melted and bubbly.
- Remove from the oven, garnish with chopped cilantro, and serve hot.
