Ingredients

  • Chorizo - 200 grams
  • Eggs - 4 large
  • Red bell pepper - 1 medium, diced
  • Green bell pepper - 1 medium, diced
  • Onion - 1 small, diced
  • Garlic - 2 cloves, minced
  • Olive oil - 1 tablespoon
  • Cilantro - 2 tablespoons, chopped
  • Salt - to taste
  • Black pepper - to taste
  • Cheddar cheese - 50 grams, shredded

Steps

  1. Preheat your oven to 180°C (350°F).
  2. In a skillet over medium heat, add the olive oil and sauté the diced onion and garlic until translucent, about 3-4 minutes.
  3. Add the diced red and green bell peppers to the skillet and cook for another 5 minutes until softened.
  4. Add the chorizo to the skillet, breaking it apart with a spatula and cooking until browned, about 5-7 minutes.
  5. Season the mixture with salt and black pepper to taste.
  6. In a bowl, beat the eggs and pour them over the chorizo and vegetable mixture in the skillet, stirring gently to combine.
  7. Sprinkle the shredded cheddar cheese on top and transfer the skillet to the preheated oven.
  8. Bake for 10-15 minutes, or until the eggs are set and the cheese is melted and bubbly.
  9. Remove from the oven, garnish with chopped cilantro, and serve hot.
