- Red bell pepper, diced - 1 small
- Tomato, diced - 1 medium
- Black beans, canned, drained - 1/2 cup
- Corn, canned, drained - 1/2 cup
- Cumin powder - 1 teaspoon
- Paprika - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Fresh cilantro, chopped - 1 tablespoon
- Lime juice - 1 tablespoon
- Shredded kosher cheese (optional) - 1/4 cup
Steps
- Preheat the oven to 180°C (350°F).
- In a skillet, heat olive oil over medium heat and sauté onion and garlic until translucent.
- Add diced red bell pepper and cook for another 3-4 minutes until softened.
- Stir in diced tomato, black beans, corn, cumin, paprika, salt, and black pepper. Cook for 5-7 minutes until heated through.
- Remove from heat and mix in the lime juice and chopped cilantro.
- In a baking dish, layer the pork cracklings at the bottom.
- Top with the vegetable and bean mixture evenly.
- Sprinkle shredded kosher cheese on top if using.
- Bake in the preheated oven for 15-20 minutes until the cheese is melted and bubbly.
- Remove from the oven and let it cool for a few minutes before serving.
