- Cauliflower - 1 medium head (about 600 grams)
- Egg - 1 large
- Shredded mozzarella cheese - 100 grams
- Ground cumin - 1 teaspoon
- Garlic powder - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Olive oil - 1 tablespoon
- Refried black beans - 100 grams
- Diced tomatoes - 100 grams
- Shredded lettuce - 50 grams
- Sour cream - 50 grams
- Avocado - 1 medium, sliced
- Fresh cilantro - for garnish
Steps
- Preheat your oven to 220°C (425°F).
- Remove the leaves and stem from the cauliflower, and cut it into florets. Pulse the florets in a food processor until they resemble rice.
- Place the processed cauliflower in a microwave-safe bowl and microwave for 5 minutes to soften it. Let it cool slightly.
- Once cooled, place the cauliflower in a clean kitchen towel and squeeze out as much moisture as possible.
- In a mixing bowl, combine the dried cauliflower, egg, mozzarella cheese, cumin, garlic powder, salt, and black pepper. Mix until well combined.
- Line a baking sheet with parchment paper and spread the cauliflower mixture into two round crusts, about 0.5 cm thick.
- Bake in the preheated oven for 15-20 minutes or until golden brown and crispy.
- Remove the crusts from the oven and spread refried black beans evenly on each crust.
- Top with diced tomatoes, shredded lettuce, and slices of avocado.
- Drizzle with sour cream and garnish with fresh cilantro before serving.
