Ingredients

  • Cauliflower - 1 medium head (about 600 grams)
  • Egg - 1 large
  • Shredded mozzarella cheese - 100 grams
  • Ground cumin - 1 teaspoon
  • Garlic powder - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Olive oil - 1 tablespoon
  • Refried black beans - 100 grams
  • Diced tomatoes - 100 grams
  • Shredded lettuce - 50 grams
  • Sour cream - 50 grams
  • Avocado - 1 medium, sliced
  • Fresh cilantro - for garnish

Steps

  1. Preheat your oven to 220°C (425°F).
  2. Remove the leaves and stem from the cauliflower, and cut it into florets. Pulse the florets in a food processor until they resemble rice.
  3. Place the processed cauliflower in a microwave-safe bowl and microwave for 5 minutes to soften it. Let it cool slightly.
  4. Once cooled, place the cauliflower in a clean kitchen towel and squeeze out as much moisture as possible.
  5. In a mixing bowl, combine the dried cauliflower, egg, mozzarella cheese, cumin, garlic powder, salt, and black pepper. Mix until well combined.
  6. Line a baking sheet with parchment paper and spread the cauliflower mixture into two round crusts, about 0.5 cm thick.
  7. Bake in the preheated oven for 15-20 minutes or until golden brown and crispy.
  8. Remove the crusts from the oven and spread refried black beans evenly on each crust.
  9. Top with diced tomatoes, shredded lettuce, and slices of avocado.
  10. Drizzle with sour cream and garnish with fresh cilantro before serving.
