Ingredients

  • Cauliflower - 400 grams
  • Fresh cilantro - 30 grams
  • Fresh parsley - 15 grams
  • Green onion - 2 stalks
  • Garlic - 2 cloves
  • Lime juice - 1 tablespoon
  • Vegetable broth - 200 milliliters
  • Olive oil - 1 tablespoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon

Steps

  1. Rinse the cauliflower and remove the leaves and stem. Cut it into florets and pulse in a food processor until it resembles rice grains.
  2. In a blender, combine the cilantro, parsley, green onion, garlic, lime juice, and vegetable broth. Blend until smooth.
  3. In a large skillet, heat the olive oil over medium heat. Add the riced cauliflower and sauté for about 5 minutes until it begins to soften.
  4. Pour the herb mixture over the riced cauliflower, add salt and black pepper, and stir well to combine.
  5. Cover the skillet and cook for another 10-15 minutes, stirring occasionally, until the cauliflower is tender and the flavors meld.
  6. Serve warm, garnished with extra cilantro and lime wedges if desired.
