Ingredients
- Cauliflower - 400 grams
- Fresh cilantro - 30 grams
- Fresh parsley - 15 grams
- Green onion - 2 stalks
- Garlic - 2 cloves
- Lime juice - 1 tablespoon
- Vegetable broth - 200 milliliters
- Olive oil - 1 tablespoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
Steps
- Rinse the cauliflower and remove the leaves and stem. Cut it into florets and pulse in a food processor until it resembles rice grains.
- In a blender, combine the cilantro, parsley, green onion, garlic, lime juice, and vegetable broth. Blend until smooth.
- In a large skillet, heat the olive oil over medium heat. Add the riced cauliflower and sauté for about 5 minutes until it begins to soften.
- Pour the herb mixture over the riced cauliflower, add salt and black pepper, and stir well to combine.
- Cover the skillet and cook for another 10-15 minutes, stirring occasionally, until the cauliflower is tender and the flavors meld.
- Serve warm, garnished with extra cilantro and lime wedges if desired.
