- Chayote squash - 2 medium, peeled and sliced

- Onion - 1 small, diced
- Garlic - 2 cloves, minced
- Ground cumin - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Paprika - 1/2 teaspoon
- Vegetable broth - 120 ml
- Cream cheese - 100 grams, softened
- Cheddar cheese - 100 grams, grated
- Fresh cilantro - 2 tablespoons, chopped for garnish
Steps
- Preheat your oven to 180°C (350°F).
- In a large skillet, heat the olive oil over medium heat. Add the diced onion and minced garlic, cooking until softened, about 3-4 minutes.
- Add the sliced chayote to the skillet and sauté for another 5 minutes, then stir in the cumin, salt, black pepper, and paprika.
- Pour in the vegetable broth, cover, and simmer for about 10 minutes, or until the chayote is tender.
- In a mixing bowl, combine the softened cream cheese and half of the grated cheddar cheese. Mix until well blended.
- Transfer the chayote mixture into a baking dish and spread the cream cheese mixture evenly over the top.
- Sprinkle the remaining cheddar cheese on top of the casserole.
- Bake in the preheated oven for 20 minutes, or until the cheese is bubbly and golden.
- Remove from the oven and let it cool slightly before serving. Garnish with fresh cilantro.
