Ingredients

  • Chayote squash - 2 medium, peeled and sliced
  • Olive oil - 1 tablespoon
  • Onion - 1 small, diced
  • Garlic - 2 cloves, minced
  • Ground cumin - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Paprika - 1/2 teaspoon
  • Vegetable broth - 120 ml
  • Cream cheese - 100 grams, softened
  • Cheddar cheese - 100 grams, grated
  • Fresh cilantro - 2 tablespoons, chopped for garnish

Steps

  1. Preheat your oven to 180°C (350°F).
  2. In a large skillet, heat the olive oil over medium heat. Add the diced onion and minced garlic, cooking until softened, about 3-4 minutes.
  3. Add the sliced chayote to the skillet and sauté for another 5 minutes, then stir in the cumin, salt, black pepper, and paprika.
  4. Pour in the vegetable broth, cover, and simmer for about 10 minutes, or until the chayote is tender.
  5. In a mixing bowl, combine the softened cream cheese and half of the grated cheddar cheese. Mix until well blended.
  6. Transfer the chayote mixture into a baking dish and spread the cream cheese mixture evenly over the top.
  7. Sprinkle the remaining cheddar cheese on top of the casserole.
  8. Bake in the preheated oven for 20 minutes, or until the cheese is bubbly and golden.
  9. Remove from the oven and let it cool slightly before serving. Garnish with fresh cilantro.
