Ingredients

  • Cauliflower - 300 grams
  • Shredded mozzarella cheese - 150 grams
  • Egg - 1 large
  • Ground cumin - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Pepper - 1/2 teaspoon
  • Cooked carnitas - 200 grams
  • Salsa - 100 grams
  • Diced red onion - 50 grams
  • Sliced jalapeños - 30 grams
  • Fresh cilantro - 20 grams
  • Sour cream - 50 grams

Steps

  1. Preheat the oven to 200°C (400°F).
  2. Steam the cauliflower florets until tender, about 8-10 minutes, then drain and let cool.
  3. Once cooled, finely chop the cauliflower or pulse in a food processor until it resembles rice.
  4. In a bowl, combine the cauliflower, 100 grams of mozzarella cheese, egg, cumin, salt, and pepper. Mix well to form a dough.
  5. Line a baking sheet with parchment paper and spread the dough into a round pizza shape, about 1/2 inch thick.
  6. Bake the crust in the preheated oven for 15-20 minutes, or until golden brown and firm.
  7. Remove the crust from the oven and spread salsa evenly over the top.
  8. Layer the cooked carnitas, diced red onion, jalapeños, and remaining mozzarella cheese on top of the salsa.
  9. Return the pizza to the oven and bake for an additional 10-15 minutes, or until the cheese is bubbly and golden.
  10. Remove from the oven, garnish with fresh cilantro, and serve with a dollop of sour cream on the side.
