- Cauliflower - 300 grams
- Shredded mozzarella cheese - 150 grams
- Egg - 1 large
- Ground cumin - 1 teaspoon
- Salt - 1/2 teaspoon
- Pepper - 1/2 teaspoon
- Cooked carnitas - 200 grams
- Salsa - 100 grams
- Diced red onion - 50 grams
- Sliced jalapeños - 30 grams
- Fresh cilantro - 20 grams
- Sour cream - 50 grams
Steps
- Preheat the oven to 200°C (400°F).
- Steam the cauliflower florets until tender, about 8-10 minutes, then drain and let cool.
- Once cooled, finely chop the cauliflower or pulse in a food processor until it resembles rice.
- In a bowl, combine the cauliflower, 100 grams of mozzarella cheese, egg, cumin, salt, and pepper. Mix well to form a dough.
- Line a baking sheet with parchment paper and spread the dough into a round pizza shape, about 1/2 inch thick.
- Bake the crust in the preheated oven for 15-20 minutes, or until golden brown and firm.
- Remove the crust from the oven and spread salsa evenly over the top.
- Layer the cooked carnitas, diced red onion, jalapeños, and remaining mozzarella cheese on top of the salsa.
- Return the pizza to the oven and bake for an additional 10-15 minutes, or until the cheese is bubbly and golden.
- Remove from the oven, garnish with fresh cilantro, and serve with a dollop of sour cream on the side.
