- pork shoulder - 500 grams
- olive oil - 2 tablespoons
- onion - 1 medium, diced
- garlic - 3 cloves, minced
- orange juice - 100 ml
- lime juice - 30 ml
- cumin - 1 teaspoon
- oregano - 1 teaspoon
- bay leaves - 2
- salt - 1 teaspoon
- black pepper - 1/2 teaspoon
- water - 250 ml
Steps
- Cut the pork shoulder into large chunks and season with salt, black pepper, cumin, and oregano.
- In a large pot or Dutch oven, heat the olive oil over medium-high heat and brown the pork chunks on all sides, about 5-7 minutes.
- Add the diced onion and minced garlic to the pot, sautéing until the onion becomes translucent, about 3-5 minutes.
- Pour in the orange juice, lime juice, and water, then add the bay leaves.
- Bring the mixture to a boil, then reduce the heat to low and cover, allowing it to simmer for 2-3 hours until the pork is tender and easily shredded.
- Once the pork is cooked, remove the chunks from the pot and shred the meat using two forks.
- Optional: For crispy edges, spread the shredded pork on a baking sheet and broil for 5-7 minutes, watching closely to prevent burning.
- Serve the carnitas in warm tortillas or alongside rice and beans, garnished with fresh cilantro and lime wedges.
