Ingredients
- Pork shoulder - 500 grams
- Lime juice - 60 ml
- Garlic - 4 cloves, minced
- Cumin - 1 teaspoon
- Oregano - 1 teaspoon
- Bay leaves - 2
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Water - 250 ml
- Olive oil - 1 tablespoon
- Onion - 1 small, chopped
- Cilantro - for garnish
- Corn tortillas - 4
Steps
- In a large bowl, combine the pork shoulder, lime juice, minced garlic, cumin, oregano, salt, and black pepper. Mix well to coat the pork evenly and let it marinate for at least 30 minutes.
- In a large pot or Dutch oven, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
- Add the marinated pork to the pot along with the bay leaves and water. Bring to a simmer, then cover and reduce the heat to low.
- Cook the pork for about 2 hours, or until it is very tender and easily shreds with a fork. Stir occasionally and add more water if needed to keep the pork submerged.
- Once cooked, remove the pork from the pot and let it rest for a few minutes. Shred the pork using two forks.
- To crisp the carnitas, spread the shredded pork on a baking sheet and broil in the oven for 5-7 minutes, or until the edges are crispy.
- Serve the carnitas in warmed corn tortillas, garnished with fresh cilantro.
