  • Pork shoulder - 500 grams
  • Olive oil - 2 tablespoons
  • Garlic powder - 1 teaspoon
  • Cumin - 1 teaspoon
  • Chili powder - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Onion - 1 small, diced
  • Lime juice - 2 tablespoons
  • Lettuce leaves (for wrapping) - 4 large
  • Avocado - 1, sliced
  • Fresh cilantro - 2 tablespoons, chopped
  • Salsa (low carb) - 100 grams

Steps

  1. Preheat your oven to 150°C (300°F).
  2. Rub the pork shoulder with olive oil, garlic powder, cumin, chili powder, salt, and black pepper until evenly coated.
  3. Place the pork shoulder in a roasting pan and cover tightly with foil.
  4. Roast in the preheated oven for about 2 hours, or until the meat is tender and easily shreds with a fork.
  5. Once cooked, remove the pork from the oven and let it rest for 10 minutes before shredding it with two forks.
  6. In a skillet over medium heat, sauté the diced onion until translucent.
  7. Add the shredded pork to the skillet and mix with lime juice, heating through for about 5 minutes.
  8. To assemble the burgers, place a generous amount of the carnitas mixture onto a lettuce leaf, top with avocado slices, fresh cilantro, and a spoonful of salsa.
  9. Wrap the lettuce around the filling and serve immediately.
