- 1 teaspoon chili powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 4 small corn tortillas
- 1/2 cup chopped fresh cilantro
- 1/2 cup diced onions
- 1 medium avocado, sliced
- 1/2 cup pico de gallo
- Lime wedges for serving
Steps
- In a bowl, combine olive oil, lime juice, minced garlic, ground cumin, chili powder, salt, and black pepper to create a marinade.
- Place the flank steak in the marinade, ensuring it is well coated. Cover and refrigerate for at least 15 minutes (up to 2 hours for more flavor).
- Preheat a grill or grill pan over medium-high heat. Remove the steak from the marinade and discard the marinade.
- Grill the steak for about 5-7 minutes on each side, or until it reaches your desired doneness (medium-rare is about 57°C).
- Let the steak rest for 5 minutes before slicing thinly against the grain.
- While the steak is resting, warm the corn tortillas on a dry skillet until pliable.
- Assemble the tacos by placing slices of steak on each tortilla, then topping with chopped cilantro, diced onions, avocado slices, and pico de gallo.
- Serve with lime wedges on the side.
