Ingredients
- Whole grain bread - 100 grams
- Almond milk - 200 ml
- Brown sugar - 50 grams
- Cinnamon stick - 1 piece
- Cloves - 2 pieces
- Vanilla extract - 1 teaspoon
- Walnuts, chopped - 30 grams
- Raisins - 30 grams
- Pineapple chunks, canned - 50 grams
- Coconut flakes - 20 grams
Steps
- Preheat the oven to 180°C (350°F).
- Cut the whole grain bread into cubes and place them on a baking sheet. Toast in the oven for about 10 minutes or until golden brown.
- In a saucepan, combine almond milk, brown sugar, cinnamon stick, cloves, and vanilla extract. Heat over medium until sugar dissolves, then simmer for 5 minutes.
- Remove the saucepan from heat and discard the cinnamon stick and cloves.
- In a baking dish, layer half of the toasted bread cubes, followed by half of the walnuts, raisins, and pineapple chunks.
- Pour half of the syrup mixture over this layer. Repeat with the remaining bread, nuts, and fruits, then pour the rest of the syrup on top.
- Sprinkle coconut flakes on top before baking.
- Bake in the preheated oven for 15-20 minutes until heated through and slightly crispy on top.
- Allow to cool for a few minutes before serving.
