Ingredients

  • Whole grain bread - 100 grams
  • Almond milk - 200 ml
  • Brown sugar - 50 grams
  • Cinnamon stick - 1 piece
  • Cloves - 2 pieces
  • Vanilla extract - 1 teaspoon
  • Walnuts, chopped - 30 grams
  • Raisins - 30 grams
  • Pineapple chunks, canned - 50 grams
  • Coconut flakes - 20 grams

Steps

  1. Preheat the oven to 180°C (350°F).
  2. Cut the whole grain bread into cubes and place them on a baking sheet. Toast in the oven for about 10 minutes or until golden brown.
  3. In a saucepan, combine almond milk, brown sugar, cinnamon stick, cloves, and vanilla extract. Heat over medium until sugar dissolves, then simmer for 5 minutes.
  4. Remove the saucepan from heat and discard the cinnamon stick and cloves.
  5. In a baking dish, layer half of the toasted bread cubes, followed by half of the walnuts, raisins, and pineapple chunks.
  6. Pour half of the syrup mixture over this layer. Repeat with the remaining bread, nuts, and fruits, then pour the rest of the syrup on top.
  7. Sprinkle coconut flakes on top before baking.
  8. Bake in the preheated oven for 15-20 minutes until heated through and slightly crispy on top.
  9. Allow to cool for a few minutes before serving.
