Ingredients
- Bolillo bread - 2 small (or 1 large, cut into slices)
- Piloncillo - 100 grams (or brown sugar)
- Water - 1 cup (240 ml)
- Ground cinnamon - 1 teaspoon
- Cloves - 2 whole
- Raisins - 30 grams
- Chopped walnuts - 30 grams
- Grated cheese (optional, for topping) - 20 grams
- Vanilla extract - 1/2 teaspoon
Steps
- Preheat the oven to 180°C (350°F).
- In a small saucepan, combine the piloncillo, water, ground cinnamon, and cloves. Heat over medium until the piloncillo dissolves completely, then remove from heat and stir in the vanilla extract.
- Slice the bolillo bread into 1.5 cm thick slices and lightly toast them in the oven for about 10 minutes until golden brown.
- In a baking dish, layer half of the toasted bread slices at the bottom, then sprinkle half of the raisins and walnuts on top.
- Pour half of the piloncillo syrup over the layered bread, followed by the remaining bread slices, raisins, and walnuts. Finish by drizzling the rest of the syrup on top.
- If using, sprinkle the grated cheese over the top layer.
- Cover the baking dish with aluminum foil and bake for 20 minutes. Remove the foil and bake for an additional 10 minutes until the top is slightly crispy.
- Allow to cool for a few minutes before serving. Enjoy warm.
