Ingredients

  • Bolillo bread - 2 small (or 1 large, cut into slices)
  • Piloncillo - 100 grams (or brown sugar)
  • Water - 1 cup (240 ml)
  • Ground cinnamon - 1 teaspoon
  • Cloves - 2 whole
  • Raisins - 30 grams
  • Chopped walnuts - 30 grams
  • Grated cheese (optional, for topping) - 20 grams
  • Vanilla extract - 1/2 teaspoon

Steps

  1. Preheat the oven to 180°C (350°F).
  2. In a small saucepan, combine the piloncillo, water, ground cinnamon, and cloves. Heat over medium until the piloncillo dissolves completely, then remove from heat and stir in the vanilla extract.
  3. Slice the bolillo bread into 1.5 cm thick slices and lightly toast them in the oven for about 10 minutes until golden brown.
  4. In a baking dish, layer half of the toasted bread slices at the bottom, then sprinkle half of the raisins and walnuts on top.
  5. Pour half of the piloncillo syrup over the layered bread, followed by the remaining bread slices, raisins, and walnuts. Finish by drizzling the rest of the syrup on top.
  6. If using, sprinkle the grated cheese over the top layer.
  7. Cover the baking dish with aluminum foil and bake for 20 minutes. Remove the foil and bake for an additional 10 minutes until the top is slightly crispy.
  8. Allow to cool for a few minutes before serving. Enjoy warm.
