- Shrimp - 250 grams, peeled and deveined
- Tomatillos - 200 grams, husked and rinsed
- Fresh cilantro - 30 grams, chopped
- Garlic - 2 cloves, minced
- Jalapeño - 1, chopped (adjust for spice level)
- Onion - 1 small, diced
- Olive oil - 2 tablespoons
- Lime - 1, juiced
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
Steps
- In a pot, add the tomatillos and cover with water. Bring to a boil and cook for about 10 minutes until soft. Drain and set aside.
- In a blender, combine the cooked tomatillos, cilantro, garlic, jalapeño, lime juice, salt, and pepper. Blend until smooth and adjust seasoning if necessary.
- In a skillet, heat the olive oil over medium heat. Add the diced onion and sauté until translucent, about 5 minutes.
- Add the shrimp to the skillet and cook for about 2-3 minutes on each side until they turn pink.
- Pour the salsa verde over the cooked shrimp and simmer for an additional 5 minutes, allowing the flavors to meld.
- Serve hot, garnished with additional cilantro if desired.
