Ingredients

  • Shrimp - 250 grams, peeled and deveined
  • Tomatillos - 200 grams, husked and rinsed
  • Fresh cilantro - 30 grams, chopped
  • Garlic - 2 cloves, minced
  • Jalapeño - 1, chopped (adjust for spice level)
  • Onion - 1 small, diced
  • Olive oil - 2 tablespoons
  • Lime - 1, juiced
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon

Steps

  1. In a pot, add the tomatillos and cover with water. Bring to a boil and cook for about 10 minutes until soft. Drain and set aside.
  2. In a blender, combine the cooked tomatillos, cilantro, garlic, jalapeño, lime juice, salt, and pepper. Blend until smooth and adjust seasoning if necessary.
  3. In a skillet, heat the olive oil over medium heat. Add the diced onion and sauté until translucent, about 5 minutes.
  4. Add the shrimp to the skillet and cook for about 2-3 minutes on each side until they turn pink.
  5. Pour the salsa verde over the cooked shrimp and simmer for an additional 5 minutes, allowing the flavors to meld.
  6. Serve hot, garnished with additional cilantro if desired.
