Ingredients

  • Shrimp (peeled and deveined) - 300 grams
  • Dried guajillo chilies - 3
  • Dried ancho chilies - 2
  • Garlic cloves - 4 (minced)
  • Onion - 1 small (chopped)
  • Tomato - 1 medium (chopped)
  • Olive oil - 2 tablespoons
  • Apple cider vinegar - 1 tablespoon
  • Cumin powder - 1 teaspoon
  • Oregano - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Water - 1 cup

Steps

  1. Soak the dried guajillo and ancho chilies in warm water for about 15 minutes until softened. Drain and remove seeds.
  2. In a blender, combine the soaked chilies, minced garlic, chopped onion, chopped tomato, apple cider vinegar, cumin, oregano, salt, and black pepper. Blend until smooth, adding water as needed to reach a sauce-like consistency.
  3. Heat olive oil in a skillet over medium heat. Pour in the adobo sauce and cook for 5 minutes, stirring occasionally.
  4. Add the shrimp to the skillet and stir to coat them in the adobo sauce. Cook for 5-7 minutes or until the shrimp are pink and opaque.
  5. Taste and adjust seasoning if necessary. Remove from heat and let it sit for a couple of minutes before serving.
