- Shrimp (peeled and deveined) - 300 grams
- Dried guajillo chilies - 3
- Dried ancho chilies - 2
- Garlic cloves - 4 (minced)
- Onion - 1 small (chopped)
- Tomato - 1 medium (chopped)
- Olive oil - 2 tablespoons
- Apple cider vinegar - 1 tablespoon
- Cumin powder - 1 teaspoon
- Oregano - 1 teaspoon
- Salt - to taste
- Black pepper - to taste
- Water - 1 cup
Steps
- Soak the dried guajillo and ancho chilies in warm water for about 15 minutes until softened. Drain and remove seeds.
- In a blender, combine the soaked chilies, minced garlic, chopped onion, chopped tomato, apple cider vinegar, cumin, oregano, salt, and black pepper. Blend until smooth, adding water as needed to reach a sauce-like consistency.
- Heat olive oil in a skillet over medium heat. Pour in the adobo sauce and cook for 5 minutes, stirring occasionally.
- Add the shrimp to the skillet and stir to coat them in the adobo sauce. Cook for 5-7 minutes or until the shrimp are pink and opaque.
- Taste and adjust seasoning if necessary. Remove from heat and let it sit for a couple of minutes before serving.
