Ingredients

  • Young green jackfruit - 400 grams, drained and rinsed
  • Coconut milk - 200 ml
  • Garlic - 2 cloves, minced
  • Lime juice - 2 tablespoons
  • Cilantro - 2 tablespoons, chopped
  • Coconut oil - 2 tablespoons
  • Red bell pepper - 1 medium, diced
  • Red onion - 1 small, diced
  • Cornstarch - 2 tablespoons
  • Salt - to taste
  • Black pepper - to taste
  • Avocado - 1 medium, diced
  • Lime - for garnish

Steps

  1. In a large bowl, combine the drained jackfruit, coconut milk, minced garlic, lime juice, cilantro, salt, and pepper. Let it marinate for at least 15 minutes.
  2. Heat coconut oil in a skillet over medium heat. Add the diced red onion and bell pepper, sautéing until they are soft, about 5 minutes.
  3. Remove jackfruit from the marinade, and sprinkle cornstarch evenly over it, tossing to coat.
  4. Add the jackfruit to the skillet and cook for about 10-15 minutes, stirring occasionally, until it becomes golden brown and crispy.
  5. Remove from heat and serve with diced avocado and lime wedges for garnish.
