- Young green jackfruit - 400 grams, drained and rinsed
- Coconut milk - 200 ml
- Garlic - 2 cloves, minced
- Lime juice - 2 tablespoons
- Cilantro - 2 tablespoons, chopped
- Coconut oil - 2 tablespoons
- Red bell pepper - 1 medium, diced
- Red onion - 1 small, diced
- Cornstarch - 2 tablespoons
- Salt - to taste
- Black pepper - to taste
- Avocado - 1 medium, diced
- Lime - for garnish
Steps
- In a large bowl, combine the drained jackfruit, coconut milk, minced garlic, lime juice, cilantro, salt, and pepper. Let it marinate for at least 15 minutes.
- Heat coconut oil in a skillet over medium heat. Add the diced red onion and bell pepper, sautéing until they are soft, about 5 minutes.
- Remove jackfruit from the marinade, and sprinkle cornstarch evenly over it, tossing to coat.
- Add the jackfruit to the skillet and cook for about 10-15 minutes, stirring occasionally, until it becomes golden brown and crispy.
- Remove from heat and serve with diced avocado and lime wedges for garnish.
