  • Celery - 2 stalks, diced
  • Potatoes - 2 medium, diced
  • Zucchini - 1 medium, diced
  • Green beans - 100 grams, trimmed and cut into pieces
  • Corn kernels - 100 grams (fresh or frozen)
  • Tomato - 1 medium, diced
  • Vegetable broth - 1 liter
  • Cilantro - 1/4 cup, chopped
  • Lime - 1, juiced
  • Salt - to taste
  • Black pepper - to taste
  • Chili powder - 1 teaspoon
  • Cumin - 1/2 teaspoon

Steps

  1. In a large pot, heat the olive oil over medium heat. Add the diced onion and sauté until translucent, about 3-4 minutes.
  2. Add the minced garlic and sauté for another minute until fragrant.
  3. Stir in the sliced carrots, diced celery, and potatoes. Cook for 5 minutes, stirring occasionally.
  4. Add the diced zucchini, green beans, corn, and tomato to the pot. Mix well.
  5. Pour in the vegetable broth and bring the mixture to a boil. Once boiling, reduce heat to low and let it simmer for 20 minutes.
  6. Season with salt, black pepper, chili powder, and cumin. Adjust seasoning to taste.
  7. Stir in the chopped cilantro and lime juice just before serving.
