- Celery - 2 stalks, diced
- Potatoes - 2 medium, diced
- Zucchini - 1 medium, diced
- Green beans - 100 grams, trimmed and cut into pieces
- Corn kernels - 100 grams (fresh or frozen)
- Tomato - 1 medium, diced
- Vegetable broth - 1 liter
- Cilantro - 1/4 cup, chopped
- Lime - 1, juiced
- Salt - to taste
- Black pepper - to taste
- Chili powder - 1 teaspoon
- Cumin - 1/2 teaspoon
Steps
- In a large pot, heat the olive oil over medium heat. Add the diced onion and sauté until translucent, about 3-4 minutes.
- Add the minced garlic and sauté for another minute until fragrant.
- Stir in the sliced carrots, diced celery, and potatoes. Cook for 5 minutes, stirring occasionally.
- Add the diced zucchini, green beans, corn, and tomato to the pot. Mix well.
- Pour in the vegetable broth and bring the mixture to a boil. Once boiling, reduce heat to low and let it simmer for 20 minutes.
- Season with salt, black pepper, chili powder, and cumin. Adjust seasoning to taste.
- Stir in the chopped cilantro and lime juice just before serving.
- Serve hot, garnished with additional cilantro and lime wedges if desired.
