Ingredients
- Halal beef shank - 300 grams
- Water - 1.5 liters
- Carrots - 1 medium, sliced
- Potato - 1 medium, diced
- Zucchini - 1 medium, diced
- Corn on the cob - 1 ear, cut into pieces
- Cabbage - 100 grams, chopped
- Garlic - 2 cloves, minced
- Onion - 1 small, quartered
- Cilantro - a handful, chopped
- Lime - 1, cut into wedges
- Salt - to taste
- Black pepper - to taste
- Chili powder - 1 teaspoon (optional)
Steps
- In a large pot, add the halal beef shank and cover with 1.5 liters of water. Bring to a boil over medium-high heat.
- Once boiling, reduce the heat to medium-low and skim off any foam that rises to the surface.
- Add the quartered onion, minced garlic, and a pinch of salt. Cover and let it simmer for about 45 minutes.
- After 45 minutes, add the sliced carrots, diced potato, diced zucchini, and pieces of corn. Stir well and season with salt and black pepper.
- Continue to simmer for another 20-25 minutes, or until the vegetables are tender and the beef is cooked through.
- Add the chopped cabbage and simmer for an additional 5 minutes.
- Taste and adjust seasoning if necessary, then remove from heat.
- Serve the caldo hot, garnished with chopped cilantro and lime wedges on the side.
