Ingredients

  • Halal beef shank - 300 grams
  • Water - 1.5 liters
  • Carrots - 1 medium, sliced
  • Potato - 1 medium, diced
  • Zucchini - 1 medium, diced
  • Corn on the cob - 1 ear, cut into pieces
  • Cabbage - 100 grams, chopped
  • Garlic - 2 cloves, minced
  • Onion - 1 small, quartered
  • Cilantro - a handful, chopped
  • Lime - 1, cut into wedges
  • Salt - to taste
  • Black pepper - to taste
  • Chili powder - 1 teaspoon (optional)

Steps

  1. In a large pot, add the halal beef shank and cover with 1.5 liters of water. Bring to a boil over medium-high heat.
  2. Once boiling, reduce the heat to medium-low and skim off any foam that rises to the surface.
  3. Add the quartered onion, minced garlic, and a pinch of salt. Cover and let it simmer for about 45 minutes.
  4. After 45 minutes, add the sliced carrots, diced potato, diced zucchini, and pieces of corn. Stir well and season with salt and black pepper.
  5. Continue to simmer for another 20-25 minutes, or until the vegetables are tender and the beef is cooked through.
  6. Add the chopped cabbage and simmer for an additional 5 minutes.
  7. Taste and adjust seasoning if necessary, then remove from heat.
  8. Serve the caldo hot, garnished with chopped cilantro and lime wedges on the side.
