- Chicken breast - 300 grams
- Carrots - 1 medium, diced
- Potato - 1 medium, diced
- Zucchini - 1 medium, diced
- Celery - 1 stalk, chopped
- Onion - 1 small, quartered
- Garlic - 2 cloves, minced
- Cilantro - 1/4 cup, chopped
- Lime - 1, juiced
- Chicken broth - 1 liter
- Olive oil - 1 tablespoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Dried oregano - 1/2 teaspoon
Steps
- In a large pot, heat the olive oil over medium heat. Add the quartered onion and minced garlic, sautéing until fragrant, about 2-3 minutes.
- Add the chicken breast to the pot and sear on both sides for about 5 minutes.
- Pour in the chicken broth and bring to a boil. Skim off any foam that rises to the surface.
- Add the diced carrots, potato, zucchini, celery, salt, pepper, and oregano to the pot. Reduce heat and let simmer for 25 minutes.
- Remove the chicken from the pot and shred it with two forks. Return the shredded chicken to the pot.
- Stir in the chopped cilantro and lime juice. Taste and adjust seasoning if necessary.
