- Shrimp - 200 grams, peeled and deveined

- Onion - 1 small, diced
- Garlic - 2 cloves, minced
- Carrot - 1 medium, sliced
- Zucchini - 1 small, diced
- Cilantro - 2 tablespoons, chopped
- Lime - 1, juiced
- Olive oil - 1 tablespoon
- Salt - to taste
- Black pepper - to taste
- Chili powder - 1 teaspoon
- Bay leaf - 1
Steps
- In a large pot, heat olive oil over medium heat. Add the diced onion and minced garlic, and sauté until the onion becomes translucent.
- Add the chopped tomato, sliced carrot, and diced zucchini to the pot. Cook for about 5 minutes, stirring occasionally.
- Pour in the water and add the bay leaf, chili powder, salt, and black pepper. Bring the mixture to a boil.
- Once boiling, reduce the heat and let it simmer for 10 minutes to allow the vegetables to cook and flavors to meld.
- Add the peeled and deveined shrimp to the pot. Cook for an additional 5 minutes, or until the shrimp are pink and cooked through.
- Remove the bay leaf and stir in the chopped cilantro and lime juice. Adjust seasoning with salt and pepper as needed.
- Serve hot, garnished with additional cilantro and lime wedges if desired.
