Ingredients

  • Shrimp - 200 grams, peeled and deveined
  • Water - 1 liter
  • Tomato - 1 medium, chopped
  • Onion - 1 small, diced
  • Garlic - 2 cloves, minced
  • Carrot - 1 medium, sliced
  • Zucchini - 1 small, diced
  • Cilantro - 2 tablespoons, chopped
  • Lime - 1, juiced
  • Olive oil - 1 tablespoon
  • Salt - to taste
  • Black pepper - to taste
  • Chili powder - 1 teaspoon
  • Bay leaf - 1

Steps

  1. In a large pot, heat olive oil over medium heat. Add the diced onion and minced garlic, and sauté until the onion becomes translucent.
  2. Add the chopped tomato, sliced carrot, and diced zucchini to the pot. Cook for about 5 minutes, stirring occasionally.
  3. Pour in the water and add the bay leaf, chili powder, salt, and black pepper. Bring the mixture to a boil.
  4. Once boiling, reduce the heat and let it simmer for 10 minutes to allow the vegetables to cook and flavors to meld.
  5. Add the peeled and deveined shrimp to the pot. Cook for an additional 5 minutes, or until the shrimp are pink and cooked through.
  6. Remove the bay leaf and stir in the chopped cilantro and lime juice. Adjust seasoning with salt and pepper as needed.
  7. Serve hot, garnished with additional cilantro and lime wedges if desired.
