Ingredients

  • Beef chuck or flank steak - 200 grams, diced

  • Garlic - 2 cloves, minced
  • Tomatoes - 2 medium, diced
  • Carrots - 1 medium, diced
  • Potato - 1 small, diced
  • Green bell pepper - 1/2, diced
  • Chicken or vegetable broth - 500 ml
  • Cilantro - 2 tablespoons, chopped
  • Salt - to taste
  • Black pepper - to taste
  • Lime - 1, cut into wedges

Steps

  1. In a pot, heat the olive oil over medium heat and add the diced beef. Sear the beef on all sides until browned, about 5-7 minutes.
  2. Add the chopped onion and minced garlic to the pot, stirring until the onion becomes translucent, about 3-4 minutes.
  3. Stir in the diced tomatoes, carrots, potato, and green bell pepper, cooking for another 3-5 minutes until the vegetables start to soften.
  4. Pour in the chicken or vegetable broth and bring the mixture to a boil. Reduce heat to low and simmer for 20 minutes, or until the beef is tender and the vegetables are cooked through.
  5. Season with salt and black pepper to taste. Stir in the chopped cilantro just before serving.
  6. Ladle the Caldillo Durangueño into bowls and serve with lime wedges on the side for an extra burst of flavor.
