- Beef chuck or flank steak - 200 grams, diced

- Onion - 1 small, finely chopped
- Garlic - 2 cloves, minced
- Tomatoes - 2 medium, diced
- Carrots - 1 medium, diced
- Potato - 1 small, diced
- Green bell pepper - 1/2, diced
- Chicken or vegetable broth - 500 ml
- Cilantro - 2 tablespoons, chopped
- Salt - to taste
- Black pepper - to taste
- Lime - 1, cut into wedges
Steps
- In a pot, heat the olive oil over medium heat and add the diced beef. Sear the beef on all sides until browned, about 5-7 minutes.
- Add the chopped onion and minced garlic to the pot, stirring until the onion becomes translucent, about 3-4 minutes.
- Stir in the diced tomatoes, carrots, potato, and green bell pepper, cooking for another 3-5 minutes until the vegetables start to soften.
- Pour in the chicken or vegetable broth and bring the mixture to a boil. Reduce heat to low and simmer for 20 minutes, or until the beef is tender and the vegetables are cooked through.
- Season with salt and black pepper to taste. Stir in the chopped cilantro just before serving.
- Ladle the Caldillo Durangueño into bowls and serve with lime wedges on the side for an extra burst of flavor.
