  • Zucchini - 1 medium, diced
  • Bell pepper - 1 medium (any color), diced
  • Tomato - 2 medium, chopped
  • Vegetable broth - 500 ml
  • Corn - 150 grams (fresh or frozen)
  • Cilantro - 2 tablespoons, chopped
  • Lime - 1, juiced
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the chopped onion and minced garlic, sautéing until the onion is translucent, about 5 minutes.
  3. Stir in the diced carrot, zucchini, and bell pepper, cooking for an additional 5 minutes until they begin to soften.
  4. Add the chopped tomatoes and cook for another 3 minutes until they start to break down.
  5. Pour in the vegetable broth and bring the mixture to a boil.
  6. Reduce the heat to low and let it simmer for about 10-12 minutes, or until all the vegetables are tender.
  7. Stir in the corn, cilantro, lime juice, salt, and pepper, cooking for an additional 2-3 minutes.
