- Zucchini - 1 medium, diced
- Bell pepper - 1 medium (any color), diced
- Tomato - 2 medium, chopped
- Vegetable broth - 500 ml
- Corn - 150 grams (fresh or frozen)
- Cilantro - 2 tablespoons, chopped
- Lime - 1, juiced
- Salt - to taste
- Black pepper - to taste
Steps
- Heat the olive oil in a large pot over medium heat.
- Add the chopped onion and minced garlic, sautéing until the onion is translucent, about 5 minutes.
- Stir in the diced carrot, zucchini, and bell pepper, cooking for an additional 5 minutes until they begin to soften.
- Add the chopped tomatoes and cook for another 3 minutes until they start to break down.
- Pour in the vegetable broth and bring the mixture to a boil.
- Reduce the heat to low and let it simmer for about 10-12 minutes, or until all the vegetables are tender.
- Stir in the corn, cilantro, lime juice, salt, and pepper, cooking for an additional 2-3 minutes.
