- Beef chuck or stew meat - 300 grams, cut into cubes
- Water - 1.5 liters
- Carrots - 2 medium, sliced
- Zucchini - 1 medium, diced
- Potato - 1 medium, cubed
- Celery - 1 stalk, chopped
- Tomato - 1 medium, diced
- Onion - 1 medium, chopped
- Garlic - 2 cloves, minced
- Fresh cilantro - 1/4 cup, chopped
- Lime - 1, juiced
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Cumin - 1/2 teaspoon
- Oregano - 1/2 teaspoon
- Olive oil - 1 tablespoon
Steps
- In a large pot, heat the olive oil over medium heat. Add the chopped onion and minced garlic, sautéing until the onion is translucent.
- Add the beef cubes to the pot and brown them on all sides for about 5-7 minutes.
- Pour in the water, then add the salt, black pepper, cumin, and oregano. Bring to a boil, then reduce heat to low and cover. Simmer for 30 minutes.
- After 30 minutes, add the carrots, potatoes, and celery to the pot. Continue to simmer for another 15 minutes.
- Add the zucchini and diced tomato, and cook for an additional 10 minutes or until all vegetables are tender.
- Stir in the lime juice and chopped cilantro just before serving.
