Ingredients

  • Beef chuck or stew meat - 300 grams, cut into cubes
  • Water - 1.5 liters
  • Carrots - 2 medium, sliced
  • Zucchini - 1 medium, diced
  • Potato - 1 medium, cubed
  • Celery - 1 stalk, chopped
  • Tomato - 1 medium, diced
  • Onion - 1 medium, chopped
  • Garlic - 2 cloves, minced
  • Fresh cilantro - 1/4 cup, chopped
  • Lime - 1, juiced
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Cumin - 1/2 teaspoon
  • Oregano - 1/2 teaspoon
  • Olive oil - 1 tablespoon

Steps

  1. In a large pot, heat the olive oil over medium heat. Add the chopped onion and minced garlic, sautéing until the onion is translucent.
  2. Add the beef cubes to the pot and brown them on all sides for about 5-7 minutes.
  3. Pour in the water, then add the salt, black pepper, cumin, and oregano. Bring to a boil, then reduce heat to low and cover. Simmer for 30 minutes.
  4. After 30 minutes, add the carrots, potatoes, and celery to the pot. Continue to simmer for another 15 minutes.
  5. Add the zucchini and diced tomato, and cook for an additional 10 minutes or until all vegetables are tender.
  6. Stir in the lime juice and chopped cilantro just before serving.
