- Fresh cilantro - 2 tablespoons, chopped (for garnish)
Steps
- Wash and slice the zucchini into small rounds or half-moons.
- In a large skillet, heat the olive oil over medium heat.
- Add the diced onion and sauté for about 3-4 minutes until translucent.
- Stir in the minced garlic, red bell pepper, and green chili (if using). Cook for another 2-3 minutes.
- Add the sliced zucchini, ground cumin, salt, and black pepper to the skillet. Stir well to combine.
