Steps

  1. In a saucepan, combine the coconut milk, brown sugar, and the cinnamon stick over medium heat.
  2. Stir occasionally until the sugar has completely dissolved and the mixture begins to simmer.
  3. In a small bowl, mix the cornstarch with the water to create a slurry, then add this to the saucepan.
  4. Continue to cook the mixture, stirring constantly for about 10-15 minutes, or until it thickens to a syrupy consistency.
  5. Remove the saucepan from the heat and stir in the vanilla extract and a pinch of sea salt.
