Ingredients

  • Goat's milk - 500 ml
  • Brown sugar - 100 g
  • Vanilla extract - 1 tsp
  • Cinnamon stick - 1
  • Baking soda - 1/4 tsp
  • Sea salt - a pinch

Steps

  1. In a medium saucepan, combine the goat's milk, brown sugar, and a pinch of sea salt.
  2. Add the cinnamon stick and bring the mixture to a gentle simmer over medium heat, stirring constantly to dissolve the sugar.
  3. Once the mixture simmers, reduce the heat to low and stir in the baking soda. This will cause the mixture to foam up, so stir continuously.
  4. Continue to cook on low heat, stirring frequently, for about 30-35 minutes until the mixture thickens and turns a deep caramel color.
  5. Remove the saucepan from heat, discard the cinnamon stick, and stir in the vanilla extract.
  6. Let the cajeta cool for a few minutes before transferring it to a clean jar or serving dish. Allow it to cool completely before storing.
