- Nopal cactus (cooked and diced) - 150 grams
- Cherry tomatoes - 100 grams, halved
- Red onion - 50 grams, thinly sliced
- Corn kernels - 100 grams (canned or fresh)
- Avocado - 1 medium, sliced
- Fresh cilantro - 30 grams, chopped
- Lime juice - 2 tablespoons
- Olive oil - 1 tablespoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Vegan cheese (optional) - 50 grams
Steps
- Preheat the oven to 220°C (428°F).
- Roll out the pizza dough on a floured surface to your desired thickness.
- Transfer the rolled dough to a baking sheet lined with parchment paper.
- Brush the dough with olive oil and season with salt and pepper.
- Bake the pizza dough in the preheated oven for 10 minutes or until lightly golden.
- In a bowl, combine the diced nopal cactus, cherry tomatoes, red onion, corn kernels, cilantro, lime juice, salt, and black pepper. Mix well to create the cactus salad.
- Remove the pizza from the oven and evenly spread the cactus salad over the base.
- If using, sprinkle the vegan cheese on top of the cactus salad.
- Return the pizza to the oven and bake for an additional 5-7 minutes until everything is heated through and the cheese is melted.
- Remove from the oven, add avocado slices on top, and garnish with additional cilantro if desired.
