Ingredients

  • Nopal cactus pads - 2 medium, cleaned and sliced
  • Almond flour - 1 cup
  • Egg - 1 large
  • Mozzarella cheese - 100 grams, shredded
  • Olive oil - 2 tablespoons
  • Garlic powder - 1 teaspoon
  • Oregano - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Tomato sauce - 1/4 cup
  • Bell pepper - 1/2 cup, diced
  • Red onion - 1/4 cup, diced
  • Fresh cilantro - 2 tablespoons, chopped

Steps

  1. Preheat your oven to 220°C (425°F).
  2. In a bowl, combine the almond flour, egg, garlic powder, oregano, salt, and black pepper to form a dough.
  3. On a baking sheet lined with parchment paper, spread the dough into a flat, circular shape about 1/2 cm thick.
  4. Bake the flatbread in the preheated oven for 10 minutes or until golden brown.
  5. While the flatbread is baking, grill the nopal cactus pads on medium heat for about 5 minutes on each side until tender; then chop them into bite-sized pieces.
  6. Remove the flatbread from the oven and spread the tomato sauce evenly over the top.
  7. Sprinkle the shredded mozzarella cheese over the sauce, followed by the grilled nopal, diced bell pepper, and red onion.
  8. Return the flatbread to the oven and bake for an additional 10 minutes, or until the cheese is melted and bubbly.
  9. Once out of the oven, sprinkle with fresh cilantro before slicing and serving.
